Ingredients
  

  • 12 oz Potatoes Gratin Leftover from Christmas Dinner
  • 1 lb Baked Ham Cubed
  • 1/2 cup Mixed Cheeses Shredded
  • 6 ea Eggs Jumbo
  • 1/3 cup Whole Milk
  • 1 ea Bell Pepper Washed, Stemmed, Seeded, Diced
  • 2 ea Jalapeno Peppers Optional
  • 2 cloves Garlic Peeled, minced
  • 1 ea Onion Medium, peeled, diced
  • 2 tbsp Butter

Instructions
 

  • Preheat your oven to 350 degrees
  • In a large bowl beat the eggs and milk to combine
  • In a large skillet over medium heat, foam out the butter
  • Add the onion and cook until translucent and soft, ~ 2 minutes
  • Add the bell pepper, garlic, and potatoes, and cook until the potatoes are warmed through, take a quick taste, and season.
  • Add the ham and stir to combine, Add the egg mixture, Top with cheese and bake.
  • Bake for 40 minutes then check on it. The edges should be lightly brown and the center should be set and not jiggly.
  • Rest 10 miniutes on a cooling rack
