Method
- Toast sliced bagel until golden brown.
- Heat oil in a frying pan over medium heat and add egg
- Pan-fry until just set, 3 to 4 minutes.
- Mash avocado in a medium bowl; sprinkle with salt and black pepper.
- Spread 1 tablespoon avocado on each toasted bagel half.
- Add hot sauce to taste
- Top with Egg

This is an essential play; there are SOOOO MANY ways to twist this.
1.) Use gochujang for the hot sauce; mince onion, and jalapeno into the avocado mash
2.) Poach the egg, soft boil the egg
3.) Add additional protein in the form of lox, ham, bacon, etc
