Basic Enchilada Sauce

Ingredients
  

  • 2 tbsp Olive Oil
  • 2 tbsp AP Flour
  • 1 can Hatch Chili Peppers 4 oz
  • 3 tbsp Chili Powder
  • 1/2 tsp Minced Garlic
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Dried oregano
  • 1 can Tomato Sauce 8 oz.
  • 2 Cups Chicken Stock Low Sodium
  • Salt To Taste

Method
 

  1. In a small saucepan over medium heat, heat oil until it shimmers
  2. Add spices, and peppers, cook until fragrant
  3. Add garlic and cook until fragrant
  4. Add flour and cook for ~ 1 minute, whisk constantly, we want a slight color here
  5. Add stock and tomato sauce gradually, stirring constantly, When it reaches a simmer, reduce heat to medium low and cook 10 minutes or until the sauce has thickened.
  6. Taste and balance flavor.

Notes

Just a quick and dirty red enchilada sauce.
Choose your peppers, adobe can be added, jalapeno's can be added to kick things up a notch.
