Boxing Day Strata

Ingredients
  

  • 12 oz Potatoes Gratin Leftover from Christmas Dinner
  • 1 lb Baked Ham Cubed
  • 1/2 cup Mixed Cheeses Shredded
  • 6 ea Eggs Jumbo
  • 1/3 cup Whole Milk
  • 1 ea Bell Pepper Washed, Stemmed, Seeded, Diced
  • 2 ea Jalapeno Peppers Optional
  • 2 cloves Garlic Peeled, minced
  • 1 ea Onion Medium, peeled, diced
  • 2 tbsp Butter

  • 1 Skillet Oven Proof

Method
 

  1. Preheat your oven to 350 degrees
  2. In a large bowl beat the eggs and milk to combine
  3. In a large skillet over medium heat, foam out the butter
  4. Add the onion and cook until translucent and soft, ~ 2 minutes
  5. Add the bell pepper, garlic, and potatoes, and cook until the potatoes are warmed through, take a quick taste, and season.
  6. Add the ham and stir to combine, Add the egg mixture, Top with cheese and bake.
  7. Bake for 40 minutes then check on it. The edges should be lightly brown and the center should be set and not jiggly.
  8. Rest 10 miniutes on a cooling rack
