Breakfast for Dinner

Ingredients
  

  • 2 cups Potatoes Washed, diced
  • 1 ea Red Bell Pepper Washed, seeded, diced
  • 1 ea Green Bell Pepper Washed, seeded, diced
  • 1 ea Onion Peeled, diced
  • 1/2 ea Smoked Sausage Cooked, sliced to 1/4 " coins, ~8oz
  • 1/4 tsp Kosher Salt
  • 1 tsp Paprika Sweet
  • 1/4 tsp Chili Powder
  • 1 - 2 ea Jalapeno Pepper Washed, seeded, diced. (Optional)
  • 1/2 cup Cheddar Cheese Grated, optional
  • 2 Ea Eggs
  • 1 tbsp Netural Oil Canola
  • Fresh Ground Black Pepper

Method
 

  1. Heat up the oven to 400 F
  2. While the oven is heating soak the potatoes in water, ~ 15 minutes
  3. Drain the potatoes, and dry on paper towels
  4. Toss the potatoes, peppers, onions, and spices in a large bowl
  5. Coat a cast iron skillet with the oil
  6. Add the vegetable mix and place in the oven to bake until the potatoes are tender. ~30-40 minutes.
  7. Remove from the oven and reduce heat to 350.
  8. Make a well for each egg in the vegetables, and crack an egg into it.
  9. Give each egg a sprinkle of salt and pepper. And sprinkle on the cheese.
  10. Return the skillet to the oven for an additional 10-15 minutes, adjust the time to match your desired yolk texture, and the cheese is melted and bubbly.

Notes

A simple meal, perfect for dinner, lunch, or even breakfast.
One can substitute hot dogs for the smoked sausage or drop the meat entirely for a vegetarian meal.  (One might need additional oil, but not much)
One can stretch out the initial bake for more caramelization on the veggies. Just stir on occasion.
