Method
- Heat up the oven to 400 F
- While the oven is heating soak the potatoes in water, ~ 15 minutes
- Drain the potatoes, and dry on paper towels
- Toss the potatoes, peppers, onions, and spices in a large bowl
- Coat a cast iron skillet with the oil
- Add the vegetable mix and place in the oven to bake until the potatoes are tender. ~30-40 minutes.
- Remove from the oven and reduce heat to 350.
- Make a well for each egg in the vegetables, and crack an egg into it.
- Give each egg a sprinkle of salt and pepper. And sprinkle on the cheese.
- Return the skillet to the oven for an additional 10-15 minutes, adjust the time to match your desired yolk texture, and the cheese is melted and bubbly.

A simple meal, perfect for dinner, lunch, or even breakfast.
One can substitute hot dogs for the smoked sausage or drop the meat entirely for a vegetarian meal. (One might need additional oil, but not much)
One can stretch out the initial bake for more caramelization on the veggies. Just stir on occasion.
