Ingredients
  

  • 6 ea Eggs Jumbo
  • 1/4 cup Mayonnaise Good stuff Not "Lite"
  • 1 tbsp Rice Vinegar
  • 1 tbsp Wasabi Paste
  • 1 tbsp Grated Ginger
  • Sriracha Sauce
  • Horseradish Fresh Grated / Creamy Sauce
  • Haressa
  • Garnish Jalapeno, Chives, Habanero powder, etc.
  • Salt

Method
 

  1. Cook eggs to hard boil, https://www.roguechef.com/?p=1294
  2. Cool, shell and split lengthwise
  3. Use a tablespoon to gently remove the yolks, to a mixing bowl
  4. Add mayo, wasabi, vinegar and ginger to yolks and beat, looking for a pipable texture. Adjust texture with additional vinegar / mayo
  5. Taste, season, and balance flavor
  6. In the bottom of each white, add a dollop of either, Sriracha, Horseradish, wasabi, or haressa
  7. Pipe yolk mixture to cover, and garnish
  8. Cover and refrigerate until ready to serve

Notes

These are a rather "devilish" appetizer. 
If one ignores the psychotic bend to this dish and focuses on the basics, one has a very good / basic deviled egg recipe.
The variations are almost endless.  (one favorite is to go heavy on horseradish in the filling, and garnish with a bit of smoked salmon).
