- Melt butter in a heavy-bottomed pan over medium heat. Cook and stir onion in the melted butter until softened
- Drop heat to low, cover and cook until the onions have caramelized, this can take 30 minutes depending on the pan, the stove and the onions. Check and stir occasionally
- Add the flour, cook for 1-2 minutes, whilst stirring to coat the flour with butter and cook off the raw flavor
- Add the stock, wine, miso and stir well to blend, simmer to reduce.
- Taste, season and balance flavor

Notes
Again a general process, one can use red onions, white onions, yellow onions, or sweet onions.
If one is to serve over say beef liver, I'd use a beef stock, for pork (bangers and mash), i'd use a chicken stock.
One can add 8 oz of mushrooms along with the onions and use a mushroom stock to produce a steller mushroom gravy .
To hasten the caramelization process a 1/2 tsp of baking soda will bump the ph and the browning.
Various dried herbs can be added to enhance specific flavors, (sage for pork, rosemary for beef, etc)
