Garlic Confit and Oil

Ingredients
  

  • 4 heads Garlic Peeled
  • 2 cups Olive oil
  • 2 sprigs Fresh Thyme
  • 2 sprigs Fresh Rosemary

Method
 

  1. In a 2 quart heavy saucepan over lowest heat possible, bring garlic, oil and herbs to a bare simmer
  2. Simmer until the garlic is knife tender, ~15-20 minutes, stirring occasionally
  3. Remove for heat and cool
  4. Transfer garlic and herbs to a sterilized jar and cover with the oil
  5. The remaining oil can be used as an ingredient for dishes calling for olive oil or as a fat for sauteing.

Notes

As a bonus item, one can drop the same raw garlic cloves into a sterilized jar of vinegar and steep for upto a month for a garlic powered vinegar.  
One can also add the herbs as well
