Left Over Stew

Sometimes good meat is left over and is ruined with reheating. Try this instead

Ingredients
  

  • 1 ea Steak Leftover, Precooked, Cut into 1/2" cubes
  • 1 stalk Celery Washed, cut to 1/2" chunks
  • 1 ea Carrot Peeled, cut to 1/2" chunks
  • 1/2 ea Onion Small, Cut to 1/2" chunks
  • 1-2 cups Beef Stock Low Sodium
  • 1/2 cup Water
  • 1 tbsp Corn Starch
  • 1/2 Cup Corn Kernels optional
  • 1/2 cup green peas optional
  • 2 ea Potatoes Small, cubed to 1/2", optional
  • 1/2 cup Cremini Mushrooms Cleaned, Quartered
  • 2 tbsp Oil Neutral

Method
 

  1. Chop everything into 1/2" (bite-size) pieces
  2. In a medium pot over medium heat, add the oil and bring it to a shimmer
  3. Add carrots, celery, and 1/2 onion in a pot to soften and cook for ~ 5 minutes, until the veggies soften.
  4. Add 1 cup of stock, steak, and optional veggies to the pot.
  5. Bring to a low simmer and cook until veggies are fully cooked.
  6. Add the cornstarch to 1/2 cup of stock, and stir mix well.
  7. Cook until the sauce thickens.

Notes

Funny to hear me say, but I had steak last night.  And I have found most methods of reheating turn a good steak into show leather.
But maybe a wet cooking method, like a stew/braise, will help here.
I'll serve this over mashed potatoes.
