Mayu (Black Garlic Infused oil)

A confit of well caramelized garlic, perfect as a drizzle for ramen

Ingredients
  

  • 1/4 cup Neutral Oil Canola or other tasteless oil
  • 1/4 cup Toasted Sesame Oil Decent stuff, but not top shelf
  • 4 tbsp Minced Garlic

Method
 

  1. Combine canola oil and garlic in a small saucepan and cook over medium-low heat, stirring, until it starts to brown.
  2. Reduce heat to low and continue to cook, frequently stirring, until the garlic becomes sticky and almost entirely black.
  3. Move to a heat-proof bowl and drizzle in the sesame oil; stir to combine.
  4. Let cool completely.
  5. Move to a food processor or blender and blend until smooth.
  6. Move to a sealable container, and refridgerate

Just a simple little condiment, I drizzle on noodles and use in my Asian flair stir-fry sauces.
