Sausage Gravy

Ingredients
  

  • 1 lb Breakfast Sausage Mild or wild
  • 1/3 cup AP Flour
  • 4 cups Whole Milk Divided
  • 2 tsp Black Pepper Fresh Ground

Equipment

  • 1 Skillet Large, Cast Iron is my choice

Method
 

  1. Crumble sausage into a large skillet.
  2. Brown the sausage over medium-high heat until no longer pink and has rendered out the fat.
  3. Sprinkle on half the flour and stir to create a roux
  4. Add the rest of the flour bit by bit, stirring constantly
  5. cook the roux for another minute 
  6. Add the milk slowly, stirring constantly
  7. Cook the gravy, stirring frequently, until it thickens.
  8. Add the pepper, and stir to combine
  9. Taste and balance, salt may be required
  10. Continue cooking until very thick, adding milk slowly to adjust the texture
  11. Looking for a lovely thick gravy
  12. Serve over hot biscuits.
