Spicy Avocado Mayo

Ingredients
  

  • 2 ea Avocados Ripe, pitted, scooped
  • 2 tbsp olive oil EVOO, Good Stuff
  • 2 tbsp Lemon Juice Fresh Squeezed Please
  • 2 cloves Garlic Peeled, mashed
  • Hot Sauce To Taste
  • Kosher Salt To Taste
  • Ground Black Pepper To Taste
  • Herbage Optional, to Taste,, washed, rough chopped

Method
 

  1. Combine all the ingredients in a small food processor and blend until ingredients form a paste.
  2. Adjust viscosity with additional EVOO or pieces of avocado

Notes

Again a basic recipe.  One can add cilantro that has been washed, shaken dry, and chopped.  We do want any herbage added to be as dry as possible.
Thinned with oil and acid (lime or lemon juice), this will make a passable green goddess dressing. (Dropping the hot sauce, or not as is your preference)
One can vary the hot sauce, or exclude it all together to match one's taste, or one might add fresh seeded hot peppers for that special rogue chef taste kick.
