Udon Noodles

Ingredients
  

  • 200 gram Ap Flour
  • 90 ml water
  • 10 gram Salt

  • Stand Mixer
  • Dough Hook

Method
 

Noodles
  1. In your stand mixer add all and knead until a dough forms
  2. Cover and Rest ~20 minutes
  3. Knead ~5 minutes, Cover and rest ~20 minutes
  4. Repeat once more, Knead ~5 minutes, Cover and rest ~20 minutes. The dough should be quite soft and pliable
  5. Cover and rest 2 hours.
  6. Roll out in to a square approx 1/8" - 3/16" thick (size depends amount of dough)
  7. Flour and fold into 1/3, length wise (An accordian pleat)
  8. Cut into 3/16 to 1/4 strips hightwise
  9. Separate, cook immediately
Cook
  1. Bring a large pot of water to a boil (do not salt)
  2. Shake excess flour from noodles and add to water, stir to avoid sticking
  3. Cook 10-12 minutes
  4. Drain and rise in cold water

Notes

When cooked these are ready to be included in a noodle stir fry, or a bowl of soup, or tossed with a sauce and served cold.
