- Add the oil to your wok or frying pan on medium low heat
- Once the oil spiders, add the onions, mushrooms, and bell pepper.
- Sauté until the onions are caramelized, and the mushrooms have cooked through ~10 minutes
- Add the garlic, optional chili pepper, bell pepper and stir fry until fragrant, ~60 sec
- Then, add vinegar, soy sauce, sweet chili sauce.
- Add salt pepper and Kashmiri Red Pepper powder, to taste
- Mix well and cook on low heat. 3-5 minutes, stir to coat. Peppers should be tender crisp, and the sauce should cover.
- Serve over rice, noodles, flat bread

Once can prep this meal is so many ways, But the cardinal rule is fresh mushrooms, no canned sliced bits and pieces of waterlogged and flavorless once upon a time mushroom.
This can be can be sweet by adding honey, or savory with extra garlic chili paste, or fiery, with additional peppers..
As this is a stir fey you can add many things, like fresh snow peas, add just at the end so they get tender crisp, and covered with sauce.
