Oven Fried Chicken

Crispy, hot, tasty, with out the hot oil

Ingredients
  

Coating
  • 1/4 Cup Panko Bread Crumbs Crushed Fine
  • 1 tbsp Corn Starch
  • 1 tsp Kosher Salt
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/4 tsp oregano Dried
  • 1/8 tsp Black Pepper Fresh Ground
  • 1/8 tsp Thyme Dried
  • 1 tsp Cajun Seasoning optional
Chicken
  • 4 ea Chicken Thighs Skinless, boneless
  • 1 cup Buttermilk
  • 1 tbsp Hot Sauce

Method
 

Coating
  1. Mix all of the coating in a large zip lock bag
Chicken
  1. Add all of the chicken ingredients in a large zip lock bag
  2. Mix well to coat chicken, and refrigerate for 1 hour
Cooking
  1. Preheat oven to 400
  2. Retrieve chicken from fridge, and drain
  3. Place chicken into coating bag and shake to coat
  4. When well coated, place chicken on a greased sheet pan
  5. Let the chicken set for 15 minutes so the coating will adhere to the meat
  6. Place into oven and cook 35-40 minutes, until chicken reads 185F
  7. Cool and Serve

Notes

This is a loose recipe, feel free to adjust the seasonings in the coating to match your paste
This will be used in a follow on dinner, so I've used skinless / boneless thighs,  One could multiply this and do as much chicken as one can fit on a sheet pan ..
