Potato Croquettes

Once upon a time, I lived not a stone’s throw away from a pub.

“It was amazing, I could walk to the pub in 5 minutes, and it would take 15 minutes to walk back. The difference was staggering…”

Now with the official bad joke out of the way, one of their dishes, Tater Kegs, was a potato croquette, stuffed with their signature buffalo chicken, deep fried and served with either a buffalo or blue cheese dipping sauce.

And a shout out to the Knotty Pine Pub ..

I don’t have their buffalo chicken, but I do have a fridge full of some leftovers, and other assorted escapees from different meals / snacks. So perhaps I can use this to assemble those into a snack / side dish.

One can make this vegetarian by the exclusion of the bacon.

I’ll use my air fryer for this, these can also be baked in the oven or deep fried.

A croquette is a small cylinder of food consisting of a thick binder combined with a filling, which is breaded and deep-fried, and served as a side dish, a snack, or fast food worldwide.

The binder is typically a thick béchamel or brown sauce, mashed potatoes, wheat flour or wheat bread. The binder may be mixed with a filling or may be stuffed with it; this mixture is called a salpicon. Typical fillings include finely chopped meat, seafood, cheese, rice, pasta, or various vegetables as well as seasonings such as spices, herbs, and mushrooms. Sweet croquettes may use a pastry cream binder and be filled with fruit.

Croquettes may also be formed in other shapes: disks, ovals, balls.

Ingredients
  

Croquettes

  • 1 lb Mashed Potatoes https://www.roguechef.com/?p=267
  • 6 slices Thick Cut bacon cut to small lardons (bits)
  • 3 ea Egg Jumbo
  • 4 oz Smoked Gouda or easy melting cheese, small cube
  • 4 oz Cheddar Cheese or easy melting cheese, small cube
  • 1/3 cup AP Flour
  • 1 cup Panko Bread Crumbs
  • 1/4 cup Herbage Chopped Parsley, Chives
  • 1/4 ea Medium Onion Peeled Chopped
  • Oil Spray
  • Salt / Pepper To taste

Bacon Dip

  • 1 cup Sour Cream
  • 1 tsp Smoked Paprika
  • 1 tbsp Chopped Herbage Parsley, Chives
  • 1 tsp Grated Horseradish

Instructions
 

Croquettes

  • In a medium skillet, over medium heat, Fry off the bacon lardons until crispy, reserve fat
  • Remove and reserve bacon bits
  • Add onions and fry until soft and translucent, remove to paper towel and drain
  • In a mixing bowl, mix mashed potatoes, 1 beaten egg, 2/3 of bacon bits, onions, 1/4 cup chopped herbage, looking for a stiff mixture, adjust texture with milk / flour
  • using a small disher, form balls, (just under golf ball size) and insert one small cube of each cheese
  • Move potato balls to a baking sheet and chill for 20 minutes

Bacon Horseradish Sauce

  • Mix all in a small mixing bowl, along with 1/3 of the bacon bits
  • Chill for 15 minutes

Cook / Assemble

  • Set up a breading station of three plates
  • Plate one is the ap flour
    Plate two is the beat eggs
    Plate three is the panko
  • Roll each croquette in flour, then egg, the panko, place on lubed air fryer basket
  • Set air fryer for 350, and preheat
  • Spray tops of the croquettes with oil spray
  • Air fry until golden and crispy, ~20-30 minutes
  • Serve with dipping sauce.

Notes

Similar to my Latke, (https://www.roguechef.com/?p=283) but used as refrigerator velcro, (I.E.  Left over stuff in fridge), one can insert pieces of shredded cooked meat, (chicken tossed in buffalo sauce is good)  
The options here are only limited by the contents of your fridge and your mind.
One can deep fry, one can bake (400 F for 15-20 minutes)
One can make the croquettes ahead of a meal then air-fry, bake, deep fry when ready, just store covered in the fridge.
I used cheddar and gouda, but any smooth melting cheese will work.
