Oven Fried Mushrooms

It’s cold, and I want a snack. I AM NOT going out, so lets see what’s in the fridge.

A nice pack of button mushrooms, some schezwan chutney sauce, some parmesan , and in the cabinet I have some granulated garlic, and some panko. Sounds like a nice fried mushroom snack, but I do not want to start frying things at 9:00 o’clock at night.

Guess I’ll look to oven fry these puppies.

One of the key items in any dish with mushrooms is to control the water. Mushrooms that are damp will always turn into little lumps of chewey rubber. Not what I want.

I’ll not get into the never ending discussion of wipe or wash, but will do as I always do and give them mushrooms a quick rinse under cold water, set off on a thick layer of paper towels, (stem down), and let them drain for 15 minutes. One they have drained I’ll toss them in a bit of cornstarch and let them dry once more.

I’ll add in some flavor and texture by using panko that I’ve added granulated garlic, paramesan cheese, some herbage, and season it with salt and pepper.

Oven Fried Mushrooms

Baked Mushrooms, with a crisy garlic and parmesan crust. Serve with some spicy chutney, or ranch dressing, and you have the perfect snack

Servings 4 servings

Ingredients
  

  • 20-24 ea Mixed Mushrooms Cleaned and dried
  • 2 tbsp Corn Starch
  • 1 oz Parmesan cheese grated fine
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 1 tsp Herb Dried Parsley, Thyme
  • 2 cup Panko Bread Crumbs
  • 2 ea Egg Whites
  • 1/2 tsp Salt

Instructions
 

  • Preheat your oven to 450 Line a sheet pan with parchment paper
  • In a small bowl, mix panko, cheese, garlic, herbs, salt and pepper
  • In a another small bowl whisk egg whites with a tsp of water
  • Dip each mushroom in the egg thence roll in the panko mixture, cover thoroughly Place in sheetpan
  • Bake 10 - 15 minutes until golden brown.

Notes

Serve with Ranch, or Horseradish, or for an exotic flair, a spicy chutney.
