Mini Corn Dogs

Just a riff on the usual “pigs in a blanket”, I can do the “ruff-puff” pastry as the crescent roll portion of that venerable appetizer, but I just do not want to spend the time.

BUT… I have a perfectly working hush puppy recipe, and I have the mini smoked sausages. This maybe a marriage made in heaven.

I’ll use a fully cooked mini sausage, that I have brought to room temp, dried and dredged in ap flour so my hush puppy mix sticks. Then mold the dough to the sausage and air fry.

Ingredients
  

  • 1 pgk Mini Smoked Sausages You know the ones ~ 40 links
  • 1 batch Hush Puppy Mix https://www.roguechef.com/?p=1994
  • 1/2 cup AP Flour
  • 1 box Tooth Picks

Instructions
 

  • Make sure the mini sausages are room temp, and dry
  • Mix hush puppy batter and let sit 15 minutes
  • Spear Sausages with toothpicks from the long end
  • Using a #30 disher, scoop out a ball of dough, form around sausage
  • Set air fryer to 400 and preheat
  • Line fryer basket with foil and lube with cooking spray
  • Air fry until golden and crispy, ~10-15 minutes

Notes

Perfect little finger foods, bake’em up, and set out.  
Serve with mustard, ketchup, aioli, pepper sauce, etc.

Ingredients
  

  • 138 grams Corn Meal ~ 1 cup
  • 190 grams Buttermilk ~ 3/4 cup
  • 90 grams AP Flour ~ 3/4 cup
  • 1 ea Egg Jumbo
  • 8 grams Baking Powder ~ 1.5 tsp
  • 6 grams salt ~ 1/3 tsp
  • 2 grams cayenne pepper ~ 1/4 tsp
  • 2 grams Onion Minced
  • 2 grams Jalapeno Pepper Minced
  • 1 clove garlic peeled, minced

Instructions
 

  • Set air fryer to 400 and preheat
  • Line fryer basket with foil and lube with cooking spray
  • In large bowl, mix all to a stiff mix, rest 5 minutes
  • Use a # 30 disher to place puppies into air fryer basket, do not crowd
  • Air fry until golden and crispy, ~9-10 minutes

Notes

I’ve used jalapeno’s here, one can sub with green pepper, one can also sub with whole kernel corn.
Serve hot, with a side of butter, or serve as a side to a chili or a stew.
I have been known to add a touch of bacon fat to the mix, I have also been know to eat these ice cold out of the fridge.
